Building Culture and Leadership in an Award-Winning , High Performance Hospitality Team
Client context
An award-winning Melbourne fine dining restaurant wanted to strengthen culture and leadership within its front-of-house team.
In an environment where timing, attention and the quality of interaction between people directly affect the guest experience, leadership wanted to strengthen communication and create greater alignment around the values that defined the restaurant and its approach to service.
What was happening
The intensity of fine dining creates particular demands on a team. During busy services, pressure and pace could influence communication and interactions between staff.
Leadership also wanted to address respectful workplace behaviour and some of the less obvious social dynamics affecting the team. Informal groups, exclusion and interpersonal tensions could influence collaboration, even when individual staff were highly capable.
The work therefore needed to go further than communication skills. It needed to connect culture, behaviour and the experience the restaurant was trying to create.
How ALSHA worked
ALSHA designed and facilitated a culture development program for the front-of-house team, complemented by individual leadership coaching.
A central part of the work was reconnecting staff with what they were collectively in service to. Individual relationships naturally exist within any workplace, but each service required the team to come together around a shared purpose and standard.
The restaurant's values were explored through the everyday reality of service: what would those values actually look and feel like in communication, decision-making and behaviour between colleagues?
The program also introduced embodied awareness and self-regulation practices for high-pressure service. Staff examined how their own state, attention and interactions could influence the atmosphere around them, including the experience of colleagues and guests.
Leadership coaching continued this work at an individual level, with attention to the conversations and everyday leadership behaviours through which culture is reinforced.
What emerged
The team developed a clearer shared understanding of the relationship between workplace culture and exceptional service. Staff explored how individual behaviour and informal social dynamics could affect the wider team, and developed practical ways to reconnect with shared values and purpose before and during service.
The work also gave staff techniques for recognising and regulating their own responses under pressure, while leadership coaching strengthened the capacity to continue working with communication, behaviour and culture beyond the facilitated sessions.
